What do You guys do with all the cluster dumps or eeprom dumps? I mean that I actually don't know what they are used for.

The EEPROM and cluster are where the immobiliser info (and other stuff) is stored. So immo-off is done in the EEPROM. If you want the immo on and working, the cluster and eeprom need to be paired, which some people do manually, etc.

How do you dump the cluster data ? Been searching for clues of how-to but cant find anything :/ Maybe searching for wrong words

It all depend what car are you talking about.
You can use AVDI/FVDI/VAG K+CAN Commander (the last one is just a really bad clone of old AVDI software), VAG Dash COM/VAG Dash CAN could also do some cars and VAG Tacho can also do some. For "simple" VDO instrument clusters found in Golf/Bora/Jetta/Octavia/Passat/SuperB/Sharan/Alhambra/Galaxy even VAG EEProm Programmer could be used.
