So the diagnostic channel reports a max of 364.08g/sec, but does the ECU "see" any more? I've used KFKHFM to dial down my fuel trims so the MAF reading is overscaled a touch. When logging in VCDS, 364.08 is the most I see so I wondered if the ECU is then having to go soley on wideband feedback for fuelling. Lambda control is +/- 5% in the higher revs so it doesn't seem to be struggling.

Yes.
~1820 is the hard limit.

1820g/sec or kg/hr? Either way, I'm good. 1820kg/hr is 505g/sec.

or 6553.5 kg/hr.

But you will probably max out your ps_w way before that.
