Ive just bought a second hand ECU for a 210BHP AMK engine and found this inside? Can anyone shed some light as to what it is? Thanks in advance

Does that mean its remapped? How would i go about using this ecu on my car? Can i just match immo? Or would it need immo defeat? Ive managed to read file in boot mode but dont know if file will be any good? Just nees to know if its stage1/2

Yes remapped, in my experience (limited) ecu's like this have immo defeated. You most likely can't flash over it. Find a stock file, and compare to see what is changed. Re-sell it and buy virgin ecu.
