During tuning I want to check if my ignition angles in KFZW and KFZW2 fit or if the system has to retard the ignition angle based on knock.

If I have understood the infos on https://s4wiki.com/wiki/Timing correctly, there is a short term retard, a long term retard and a "medium term retard" for the knock control, just as there is an STFT and LTFT for the fuel. I guess that these correction values are stored in RAM.

To check if my values in KFZW and KFZW2 fit, I would like to reset long term retard and medium term retard, before I do a full throttle run. Is there a way to reset them? Maybe the same as resetting the LTFT by clear DTCs to reset the values to zero?

Yes, clearing DTCs will reset the trims.
