So have been playing with which variables to log and just wanted to know if anyone knows how the ECU figures out msdk_w? cfg entry below:

msdk_w          ; {MassAirFlowAtThrottlePlate}      ; {Massenstrom über Drosselklappe (word)}

I am pretty sure that mshfm_w is just an addition of the 2 MAFAirFlow meters again as per the entry below:
mshfm_w         ; {MassAirFlow}                     ; {Massenstrom HFM 16-Bit Größe}

Does it just estimate msdk_w based on boost pressure and throttle plate angle or something?

 It uses the throttle discharge curve, a flow characterstic map, and a pressure and temperature compensation. In the case of most setups, its using the MAP pressure pre-TB.
