Potentially a very nooby question but how do i go about logging over run, specifically to check the fueling. I can log 3rd gear pulls no issues at all but if i try to log over run ecu x plot doesn't really pick up much of any use if i start the log when i let off the gas.

The same way you log just everything else.
When plotting with ECUxPlot just play with filter settings or just disable them completely.
You can set "X" axis to time or sample #, then zoom in on the part you're interested in.
