Which maps or bits I need to change?

reverse everything the wiki says to disable it

I don't see the point of adding a narrowband EGT probe.
A wideband makes more sense, but requires a bit more work.

Not sure but most of the stock EGT sensor stuff in ME7 is narrowband. the RS6 (iirc) is one of the few exceptions. I don't know much about the S3 and Cupras but their EGT code is likely different from any A4 1.8 code.

I want to by BAM ecu and write dump from my ecu(8E0909518AN 1.8t BEX) inside, becouse my ECU doesnt have electronics for EGT probe(pin 61). So if anybody know how to enable egt probe in my ecu(which maps, bits)?
Ineed this protection because I have modified engine(GT35R,630cc, 2.0t stroker,....).

If that ECU doesn't physically have pin 61 connected to a pwm input (and/or whatever other electronics required for EGT) why would you want to use that ECU? I'm not sure I follow your reasoning.

A4 (1.8t BEX) have different cooling system (J293-coolant control module pin24) and BAM ECU doesnt have this pin in use(ELSAWIN). If it is possible to modify cooling system even better .

If the ECU you want to use does not have a pin to connect the EGT sensor to, no amount of map modifications will make it work... unless I'm missing something from your question..

I was under the impression that ME7 with wideband support (eg. the RS6) uses sensor values instead of modeled values when applicable already. It does not. No ME7 does that. EGT is used only for ATR PID. No difference between RS6 and 1.8T either. Any 32mhz 1.8T wideband ECU can take EGT PWM input. Have not checked on BEX, but BEX has 40mhz processor, firmware not compatible.
