Are there any physical differences (hardware) between the various Me7.5 (018DC, 018H, or 032xx version)?
If so, what are the 'desireable' ones?

4B0 and 06A could be crossflashed; note that longitudal ecus are non-waterproof;

narrowband and wideband are different in pcb design
8E0 ecus also differs

There is no 'desireable' in that way. Just use well defined sw with compatible ecu
