Which cell would I change?

As an example, if i wanted to increase the timing at a load of 170 but the axis data is 160 then 180, which cell is best to make the change, the 160 or 180?

Usually the values are interpolated. So i would change both.

As above... Unless you rescale the axis, the only way to change the interpolated value at 170 is to change the 160 and 180 values.

I would say it also depends on what you have on either side of the two cells. You still want the transition to be smooth. Say you want 10 degrees at 170..8 at 160 and 12 at 180. Also shouldn't be too hard to re-scale the axis.
