I'm looking into building a canbus simulator (Something like this) with an arduino and a canbus shield. The hardware and software portion should be relatively simple, but since I don't have access to a B6 or late C5 I can't think of a way to find the PIDs and messages that I need to transmit to the radio. Is there any way to find these PIDs other than logging canbus communications? From what I understand these messages are broadcast by the instrument cluster, but would I be able to find any useful information from the radio by itself?

You could power up just a radio on the bench and log the messages. I have done the same with an ecu, they are constantly broadcasting messages weather someone is listening or not.

Just for others, RDS messages are broadcasted by Radio/Navi, in 8E it is
0x261 8bytes frame: top RDS line
0x263 8bytes frame: bottom RDS line

you need yet to tx radio keepalive message also
