When I start the car (example: in the morning) I get an idle issue, it's jumping and I have to press the throttle pedal or else the engine dies. But after I drive a few feet all is back to normal.

Sometimes when I start the car and the idle is jumping and so on I also got no brakes, the brake pedal is stiff as of the car has lost the power brake assist. But all is back to normal when I drive the car a few feet.

I have checked with Vag-Com and I have no fault codes.

Car: Audi A4 B5 1.8t quattro -2001

Is it an automatic? Do you know if it has an electric vacuum pump?

If I were you I would check it for vacuum leaks.

No, it's an manual.
Yeah, that's my thought too, about a vacuum leak, any specific and usual place to check on these cars?

A bit unsettling that the power brake assist stops working when I have these idling problems.

Check power brake hose.. could be a bad one way valve?

A vacuum leak.  Check one-way valves, check pipework leading to the servo.
