What other sensors ME7.5 uses to control AFR when MAF is disconnected? In my car there's also MAP sensor. Is it used when MAF fails? Or only o2 sensor controls AFR when MAF is disconnected?

When the MAF is deemed to have failed the ECU falls back to air flow calculated from throttle angle.

unless the car has wideband o2 from factory in which case it uses these.

Thank you. Now is it normal that air flow calculated from throttle angle is corrected ~20% by wideband o2 sensor?

Depends on your set up and calibration. If you have changed things away from stock and not calibrated the correct tables, then don't expect to see/feel a stock response.
