Is there such thing a knock tables for engines?

IE

At a given octane, AFR & IAT a knock plot could be produced of RPM V boost = no knock or knock, see attachment for example of what I'm asking.

like wise you could use any of the values as the constants and the remaining values as the X & Y axis of the graph.

No.

That isn't even remotely how knock detection works, which, incidentally, is covered in depth in the various FRs.

There is literally no way to build a table like this, since knock itself doesn't work like anything you described. There are at least a half a dozen or more things that influence knock just as much (or more) than boost or rpm.
