I have the Hex-Can-USB ross tech kit coming on Wednesday.  I will start with VCDS and do the usual Vag-com tweaks like seat belt beeper delete and rest of world settings for the transmission.

As thing progress I would like to get into tuning using NefMoto.  I will redo the exhaust removing secondary cats and making longer headers placing the primary cats back where the OEM secondaries were.  For now I just want to practice open source tuning on it and will likely install centrifugal supercharger on low boost to practice tuning for one.

One of my other vehicles the Maserati also has a ME7 ECU.   Secondary cat removal and primary cat relocation are also common on this vehicle. . as is the desire for forced induction.  The primary cats and connection back to the secondaries are retarded on these cars..

Once I can pull it off on the VW I will start in on the Maser.  Pro tuning and dyno time is super expensive as are Italian engines so at the end of the day it will eventually go on the dyno at EVOMSIT.  I just want to get the hardware sorted out and the ECU running it well at a conservative tune before I take it in to pay through the nose.  Starting dyno time with tuning already somewhere in the ball park with shakedown runs of the hardware completed will be worth it.

I suggest you start with something a little easier before tackling forced induction on an NA car.

Trust me on this one.
